SIMPLE BLUEBERRY CAKE

INGREDIENTS

  • 120g plain flour
  • 2 tsp baking powder
  • 80g sugar
  • 2 eggs
  • 125g melted butter
  • 1 tsp vanilla extract
  • 1 lemon, zest only
  • 125g blueberries (fresh or frozen)

To serve

  • Ice cream or cream

 

METHOD

  1. Combine flour, baking powder and sugar in a mixing bowl. Add eggs, one at a time, mixing in-between. Add butter, vanilla and lemon zest; mix to combine.
  2. Transfer mixture to MicroPro Grill. Scatter blueberries over top of cake batter. Place cover in high position and microwave at 900 watts for 13 minutes.
  3. Remove from microwave and rest, covered, for 5 minutes.
  4. Slice and serve with ice cream or cream.
