SIMPLE BLUEBERRY CAKE
INGREDIENTS
- 120g plain flour
- 2 tsp baking powder
- 80g sugar
- 2 eggs
- 125g melted butter
- 1 tsp vanilla extract
- 1 lemon, zest only
- 125g blueberries (fresh or frozen)
To serve
- Ice cream or cream
METHOD
- Combine flour, baking powder and sugar in a mixing bowl. Add eggs, one at a time, mixing in-between. Add butter, vanilla and lemon zest; mix to combine.
- Transfer mixture to MicroPro Grill. Scatter blueberries over top of cake batter. Place cover in high position and microwave at 900 watts for 13 minutes.
- Remove from microwave and rest, covered, for 5 minutes.
- Slice and serve with ice cream or cream.
