Easy Microwave Brunchos - Brunch Nachos

COOKING TIME: 12 MINUTES

SERVES: 4 PEOPLE

 

INGREDIENTS

  • 450g uncased pork sausage (±1 lb)
  • 3 large eggs
  • Salt and pepper to taste
  • 350g tortilla chips (±12 oz)
  • 8 slices cooked bacon (crumbled)
  • 50g shredded cheddar cheese (±½ cup)
  • 120 ml nacho cheese sauce (±½ cup)
  • 1/4 red onion (finely diced)
  • 30ml scallions (thinly sliced) (±2 tbsp)
  • 45ml sour cream (±3 tbsp)
  • Hot sauce to taste (optional)

 

INSTRUCTIONS

  1. Place pork sausage in MicroPro Grill, cover in grill position and microwave for 10 min. at 1000 watts, or until sausage is no longer pink.
  2. In a small bowl, whisk eggs, salt and pepper together until well combined. Pour into Micro Healthy Delight and microwave for 2 min. at 600 watts. Once cooked, mix together with a spatula to create scrambled eggs.
  3. Arrange tortilla chips on plate and top with cooked sausage, scrambled eggs and remaining ingredients. Serve immediately
