Micro Pressure Cooker Pasta e fagioli

INGREDIENTS
- 1 large carrot,
- 1 shallot,
- 1 stick celery,
- 425 g can red kidney beans
- 1/2 cup chopped bacon
- 1 cup medium past shells
- 800 g can diced tomatoes
- 1 cup water
- Optional Parmesan rind
- 1 zucchini
METHOD

In base of Microwave Pressure Cooker, add all ingredients including Parmesan rind (if using) except zucchini. Lock in cover.

Microwave on high power/100%/900 watts for 15 minutes. Stand until pressure indicator drops, then remove cover.

Add zucchini and stir to combine. Serve warm.
