INGREDIENTS (5 PEOPLE)

  • 500 g pork and veal mince, or beef mince (±1.1 lb)
  • 15 ml olive oil (±1 tbsp)
  • 150 g pancetta or streaky bacon, diced (±5.3 oz)
  • 1 yellow onion (diced)
  • 2 garlic cloves (minced)
  • 2 bay leaves
  • 30 ml tomato paste (±2 tbsp)
  • 410 g canned diced tomatoes (±14.5 oz)
  • 1 beef stock cube, crumbled (crumbled)
  • 125 ml red wine (±½ cup)
  • 125 ml water (±½ cup)
  • Salt and pepper
  • 150 g cherry tomatoes (±5.3 oz)
For Serving:
  • Cooked pasta of choice
  • Fresh basil (thinly sliced)
  • Grated Parmesan
  • Olive oil

INSTRUCTIONS:

  1. Place all ingredients into the Micro Pressure Cooker, stir to combine then securely cover and lock. Microwave for 30 min. at 900 watts.
  2. Remove from microwave and allow to stand with the cover on until the Pressure Indicator drops, approx. 15 min., then unlock and remove cover. 
  3. Serve bolognese with cooked pasta, fresh basil, parmesan and a drizzle of olive oil.

 

Chicken and Cheese Meatballs

INGREDIENTS (4 PEOPLE)

  • 150 g Parmesan cheese (plus more for serving) (±3.5 oz)
  • 1/2 medium onion (peeled and quartered)
  • 2 garlic cloves (peeled)
  • 450 g ground chicken (±1 lb)
  • 85 g breadcrumbs (±¾ cup)
  • 15 ml Italian herb seasoning (±1 tbsp)
  • 1 egg (beaten)
  • 710 ml marinara sauce (±3 cups)

INSTRUCTIONS

  • Mince onion and garlic.

  • In a mixing bowl, add ground chicken, Parmesan cheese, minced onion and garlic, breadcrumbs, Italian herb seasoning and beaten egg then stir until well combined. 

  • Add breadcrumbs, seasoning, egg and Parmesan to chicken mixture and stir until well combined.

  • Form meat into evenly sized round balls then place in Micro Pressure Cooker. Cover with marinara sauce then securely cover and lock. Microwave for 15 min. at 900 watts.

  • Remove from microwave and allow to stand with the cover on until the Pressure Indicator drops, approx. 10 min., then unlock and remove cover. Check to ensure internal temperature of meatballs has reached 75°C/165°F.

  • Serve warm topped with Parmesan cheese.

Mexican Style Shredded Beef & Beans

INGREDIENTS (16 PEOPLE)

  • 700 g chuck roast (trimmed of excess fat and cut into 5 cm / ±2 in. large pieces) (±1½ lb)
  • 3 garlic cloves (minced)
  • 15 ml chilies in adobo or Chipotle sauce (±1 tbsp)
  • 250 ml tomato sauce (±1 cup)
  • 250 ml beef stock (±1 cup)
  • 5 ml ground cumin (±1 tsp)
  • 2 ml ground allspice or cinnamon (±½ tsp)
  • 425 g canned black beans (drained and rinsed) (±15 oz)
  • 1 jalapeno (optional) (thinly sliced)
  • 15 ml brown sugar (±1 tbsp)
  • Salt and pepper to taste
For serving
  • Cooked rice, diced avocado, chopped lettuce, sour cream, limes and pickled jalapenos

INSTRUCTIONS

  1. Place all ingredients into the Micro Pressure Cooker, then securely cover and lock. Microwave for 30 min. at 900 watts.
  2. Remove from microwave and allow to stand with the cover on until the Pressure Indicator drops, approx. 15 min., then unlock and remove cover.
  3. Remove beef onto a cutting board and shred with two forks*, then return to sauce.
  4. Make a burrito bowl with the shredded beef, cooked rice, diced avocado, chopped lettuce and remaining condiments or use meat as a filling for burritos, tacos or quesadillas.

  • 410 g canned diced tomatoes (±14.5 oz)
  • 160 ml vegetable broth (±⅔ cup)
  • 15 ml ginger paste (±1 tbsp)
  • 15 ml cumin (±1 tbsp)
  • 10 ml garam masala (±2 tsp)
  • 5 ml curry powder (±1 tsp)
  • 5 ml ground coriander (±1 tsp)
  • 5 ml chilli flakes (±1 tsp)
  • 2 ml turmeric powder (±½ tsp)
  • 75 g frozen peas (±1 cup)

For serving
  • Fresh cilantro (chopped)
  • Cooked basmati rice
  • Natural yogurt (optional)

Sweet Potato Soup

  • 800 g sweet potato** (peeled and cut into 2 cm / ±¾ in. cubes) (±1 3/4 lb))
  • 800 ml vegetable stock (±3⅓ cups)
  • 2 garlic cloves (minced)
  • 3 shallots (finely chopped)
  • 2 bay leaves
  • 5 ml ground cumin (optional) (±1 tsp)
  • Salt and pepper to taste
For serving
  • Crumbed feta
  • Olive oil
  • Fresh parsley or cilantro

INSTRUCTIONS 

  1. Place all ingredients into the Micro Pressure Cooker, stir to combine then securely cover and lock. Microwave for 30 min. at 900 watts.

  3. Mash sweet potato using a potato masher* until smooth. Garnish with crumbled feta, a drizzle of olive oil and fresh herbs.

TIP:
