Cheesy Risotto

SERVES 6 Persons PREPARATION TIME 5 min. COOKING TIME 20 min.

INGREDIENTS

  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 ½ cups Arborio rice
  • Pinch saffron or turmeric
  • 3 ½ cups hot chicken stock
  • 30 g butter, chopped
  • Chopped parsley, or shredded spinach
  • 40 g shaved parmesan cheese

METHOD

  1. Combine onion, garlic, rice, saffron or turmeric and stock in a Micro Pressure Cooker. Lock in cover and cook in microwave on high/100%/900 watts for 20 minutes.

  2. Remove and allow pressure indicator to drop. Unlock cover and stir in butter, parsley or spinach if using and parmesan. Season with pepper.
